MIRANDA'S REPLACES BIG DADDY'S

It is basically Big Daddy's with a new name.  The menu is the same.

This morning, I had my favorite Mexican breakfast.  The green sauce was excellent.  

In New York we would call this the local diner.  It is basic diner food with a Mexican flavor.

Give it a try.  I do my best to support locally owned restaurants.



For high quality Mexican food, I cook my own.  I am not paying $30+ a plate at the high-end places.  People ask me all the time, where I learned to make high-end Mexican food.  Well, you begin by staying away from Tex-Mex.

All ethnic foods are the same.  You use whatever is in season, and it must always be fresh.  My chunk taco meat is amazing.  It begins in a fresh sofrito to allow the flavors to simmer into the meat.  No taco seasoning in my home. 

I have a homemade red pepper sauce everyone loves.  People ask me how I get my beans so smokey with a pinch of heat.  One dry chipotle per pound of beans. You add garlic and white opinion and just a pinch of Comino.  Of course, salt and pepper.

My rice is a must.  When people come to use the pool, they ask that I make rice to go with whatever we grill.  

A good rice:  Begin with parboiled rice.  It is white rice without the white starch.  This is the best rice for lowering blood sugar.  You place it in oil and lightly brown.  You salt to taste.  Then if you do not have fresh, no box, chicken broth, use 1/2 cube of consummate per cup of rice.  Just break it up into the rice.  Then cover with water as you normally would.

Now the magical key.  For each cup use one side of a large bell pepper.  Cut in fours.  Then add a slice of white onion.  Let it simmer down for 30 minutes.  I am telling you the bell pepper makes for an amazing rice every time.
